Zucchini Noodles with Tomato & Grilled Shrimp Recipe

Ingredients

  • 2 medium zucchinis (spiralized into noodles)
  • 1 pound shrimp (peeled and deveined)
  • 2 cups cherry tomatoes (halved)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • Fresh basil (for garnish, optional)
  • Parmesan cheese (for serving, optional)

 


Instructions

Prepare the Shrimp

  1. In a bowl, combine the shrimp with 1 tablespoon of olive oil, lemon juice, Italian seasoning, minced garlic, salt, and pepper.
  2. Let the shrimp marinate for about 10 minutes.

Grill the Shrimp

  1. Preheat a grill or grill pan over medium-high heat.
  2. Thread the marinated shrimp onto skewers if desired.
  3. Grill for about 2–3 minutes per side, or until the shrimp are pink and cooked through.
  4. Remove from the grill and set aside.

Sauté the Zucchini Noodles

  1. In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
  2. Add the spiralized zucchini noodles and sauté for about 2–3 minutes, just until tender but still firm.

Combine Ingredients

  1. Add the halved cherry tomatoes to the skillet with the zucchini noodles and cook for another 2 minutes, until slightly softened.
  2. Gently toss in the grilled shrimp and cook for an additional minute to heat everything through.

Serve

  1. Transfer the zucchini noodles, tomatoes, and shrimp to serving plates.
  2. Garnish with fresh basil and sprinkle with Parmesan cheese if desired.
