- 2 medium zucchinis (spiralized into noodles)
- 1 pound shrimp (peeled and deveined)
- 2 cups cherry tomatoes (halved)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- Fresh basil (for garnish, optional)
- Parmesan cheese (for serving, optional)
Instructions
Prepare the Shrimp
- In a bowl, combine the shrimp with 1 tablespoon of olive oil, lemon juice, Italian seasoning, minced garlic, salt, and pepper.
- Let the shrimp marinate for about 10 minutes.
Grill the Shrimp
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated shrimp onto skewers if desired.
- Grill for about 2–3 minutes per side, or until the shrimp are pink and cooked through.
- Remove from the grill and set aside.
Sauté the Zucchini Noodles
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
- Add the spiralized zucchini noodles and sauté for about 2–3 minutes, just until tender but still firm.
Combine Ingredients
- Add the halved cherry tomatoes to the skillet with the zucchini noodles and cook for another 2 minutes, until slightly softened.
- Gently toss in the grilled shrimp and cook for an additional minute to heat everything through.
Serve
- Transfer the zucchini noodles, tomatoes, and shrimp to serving plates.
- Garnish with fresh basil and sprinkle with Parmesan cheese if desired.
