Zucchini and Feta Fritters Recipe

  • 2 medium zucchinis (about 2 cups grated)
  • 1/2 teaspoon salt (for draining zucchini)
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup feta cheese (crumbled)
  • 2 large eggs
  • 1/4 cup green onions (finely chopped)
  • 1/4 cup fresh parsley (chopped, optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Olive oil (for frying)

 


Instructions

Step 1: Prepare the Zucchini

  1. Grate Zucchini: Grate the zucchinis using a box grater or food processor.
  2. Drain Excess Moisture: Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with salt and let it sit for about 10 minutes. Then, twist and squeeze to remove excess moisture.

Step 2: Mix the Fritter Batter

  1. Combine Ingredients: In a large bowl, combine the drained zucchini, flour, crumbled feta cheese, eggs, green onions, parsley (if using), garlic powder, and black pepper. Mix until well combined.

Step 3: Cook the Fritters

  1. Heat Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat.
  2. Form Fritters: Using a spoon or your hands, scoop about 2 tablespoons of the mixture and shape it into a patty. Place it in the hot skillet. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
  3. Fry Fritters: Cook the fritters for about 3–4 minutes on each side, or until they are golden brown and crispy. Add more oil as needed for frying.

Step 4: Serve

  1. Drain Excess Oil: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.
  2. Enjoy: Serve warm, garnished with extra feta or fresh herbs if desired. They can be enjoyed on their own or with a yogurt dip!
