Zesty Lemon Poppy Seed Cottage Cheese Muffins Recipe

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1/2 cup granulated sugar (or honey)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon poppy seeds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

Step 2: Mix Wet Ingredients

  1. In a large mixing bowl, combine the cottage cheese, granulated sugar, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice. Mix until well combined.

Step 3: Combine Dry Ingredients

  1. In a separate bowl, whisk together the all-purpose flour, poppy seeds, baking powder, baking soda, and salt.

Step 4: Combine Mixtures

  1. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

Step 5: Fill Muffin Tin

  1. Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.

Step 6: Bake

  1. Bake in the preheated oven for 20–25 minutes, or until a toothpick inserted in the center comes out clean and the tops are lightly golden.

Step 7: Cool and Serve

  1. Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
