- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 1/4 cup Greek yogurt (or sour cream)
- 1/4 cup olive oil
- 1 teaspoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes
- 1 tablespoon balsamic vinegar (optional)
- Fresh basil (for garnish)
Instructions
Step 1: Roast the Tomatoes
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Tomatoes: Place the cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Roast: Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are blistered and caramelized. If using balsamic vinegar, drizzle it over the tomatoes halfway through roasting.
Step 2: Make the Whipped Feta Dip
- Combine Ingredients: In a food processor, combine the crumbled feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, dried oregano, salt, and pepper.
- Blend: Blend until smooth and creamy. Taste and adjust seasoning as needed.
Step 3: Serve
- Plate the Dip: Transfer the whipped feta dip to a serving bowl.
- Top with Tomatoes: Spoon the roasted tomatoes over the top of the dip.
- Garnish: Garnish with fresh basil leaves.
- Enjoy: Serve with crackers, pita chips, or fresh vegetables.
