Whipped Feta Dip with Roasted Tomatoes Recipe

Ingredients

  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup Greek yogurt (or sour cream)
  • 1/4 cup olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh basil (for garnish)

 


Instructions

Step 1: Roast the Tomatoes

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Tomatoes: Place the cherry tomatoes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  3. Roast: Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are blistered and caramelized. If using balsamic vinegar, drizzle it over the tomatoes halfway through roasting.

Step 2: Make the Whipped Feta Dip

  1. Combine Ingredients: In a food processor, combine the crumbled feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, dried oregano, salt, and pepper.
  2. Blend: Blend until smooth and creamy. Taste and adjust seasoning as needed.

Step 3: Serve

  1. Plate the Dip: Transfer the whipped feta dip to a serving bowl.
  2. Top with Tomatoes: Spoon the roasted tomatoes over the top of the dip.
  3. Garnish: Garnish with fresh basil leaves.
  4. Enjoy: Serve with crackers, pita chips, or fresh vegetables.
