Walnut Maple Roasted Sweet Potatoes Recipe

  • 2 pounds sweet potatoes (peeled and cubed)
  • 3 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • Salt and pepper (to taste)
  • 1 cup walnuts (chopped)
  • Fresh parsley (for garnish, optional)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

Step 2: Prepare the Sweet Potatoes

  1. In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper. Toss until the sweet potatoes are evenly coated.

Step 3: Roast the Sweet Potatoes

  1. Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  2. Roast in the preheated oven for 20 minutes.

Step 4: Add Walnuts

  1. After 20 minutes, remove the baking sheet from the oven and stir in the chopped walnuts. Return to the oven and roast for an additional 10–15 minutes, or until the sweet potatoes are tender and caramelized.

Step 5: Serve

  1. Remove from the oven and let cool slightly. Garnish with fresh parsley if desired and serve warm.
