Ingredients

For the Crust:
• 1 ½ cups graham cracker crumbs
• 1/3 cup granulated sugar
• 1/2 cup unsalted butter, melted

• 1 teaspoon vanilla extract

• 1 cup sour cream
• 1 cup heavy cream

• 2 cups fresh strawberries, hulled and sliced
• 1/4 cup granulated sugar
• 1 tablespoon lemon juice
• Optional: extra strawberries for garnish


Instructions

Step 1: Prepare the Crust
1. Preheat Oven: Preheat your oven to 325°F (160°C).
2. Mix Ingredients: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
3. Form the Crust: Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
4. Bake: Bake the crust for about 10 minutes, then remove from the oven and let it cool.

Step 2: Make the Cheesecake Filling
1. Beat Cream Cheese: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
2. Add Sugar and Vanilla: Gradually add the sugar and vanilla extract, mixing until well combined.
3. Incorporate Eggs: Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
4. Add Sour Cream and Heavy Cream: Gently fold in the sour cream and heavy cream until the mixture is smooth.

Step 3: Bake the Cheesecake
1. Pour Filling: Pour the cheesecake filling over the cooled crust in the springform pan.
2. Bake: Bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly. The cheesecake will firm up as it cools.
