- 4 large eggs

- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions (chopped)
- 1/4 cup diced bell peppers (optional)
- Salt and pepper (to taste)
- 1 tablespoon olive oil (for cooking eggs)
- Sour cream or salsa (for serving, optional)
Instructions
Step 1: Cook the Tater Tots
- Preheat your oven according to the package instructions for the tater tots (usually around 425°F / 220°C).
- Spread the frozen tater tots in a single layer on a baking sheet. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
Step 2: Cook the Eggs
- In a skillet, heat olive oil over medium heat.
- Crack the eggs into a bowl, season with salt and pepper, and whisk until combined. Pour into the skillet and scramble until fully cooked.
Step 3: Assemble the Bowl
- In a large bowl, layer the cooked tater tots, scrambled eggs, crumbled bacon (or sausage), shredded cheddar cheese, diced bell peppers, and chopped green onions.
- If desired, return the assembled bowl to the oven for a few minutes to melt the cheese.
Step 4: Serve
- Top with sour cream or salsa if desired. Serve warm and enjoy!
