Turkey & Veggie Stir-Fry Recipe

Ingredients

  • 1 lb ground turkey
  • 2 tablespoons olive oil (or sesame oil)
  • 1 bell pepper (sliced, any color)
  • 1 cup broccoli florets
  • 1 cup snap peas (or green beans)
  • 1 carrot (sliced thinly)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated or minced)
  • 3 tablespoons soy sauce (low sodium)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water, for thickening)
  • Salt and pepper (to taste)
  • Cooked rice or noodles (for serving)
  • Sesame seeds (for garnish, optional)

 


Instructions

Step 1: Prepare the Ingredients

  1. Wash and slice all vegetables as indicated. Have them ready to go, as stir-frying is quick.

Step 2: Cook the Turkey

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the ground turkey to the skillet. Cook for 5–7 minutes, breaking it apart with a spatula, until it is browned and cooked through. Season with salt and pepper.

Step 3: Add Vegetables

  1. Add the sliced bell pepper, broccoli florets, snap peas, and carrot to the skillet. Stir-fry for 3–5 minutes, or until the vegetables are tender-crisp.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

Step 4: Add Sauce

  1. In a small bowl, combine the soy sauce and oyster sauce (if using). Pour the sauce over the turkey and vegetables.
  2. Stir in the cornstarch mixture and cook for another 1–2 minutes, or until the sauce has thickened slightly.

Step 5: Serve

  1. Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds if desired.
