- 1 lb ground turkey
- 2 tablespoons olive oil (or sesame oil)
- 1 bell pepper (sliced, any color)
- 1 cup broccoli florets
- 1 cup snap peas (or green beans)
- 1 carrot (sliced thinly)
- 3 cloves garlic (minced)
- 1 inch ginger (grated or minced)
- 3 tablespoons soy sauce (low sodium)
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon cornstarch (mixed with 1 tablespoon water, for thickening)
- Salt and pepper (to taste)
- Cooked rice or noodles (for serving)
- Sesame seeds (for garnish, optional)
Instructions
Step 1: Prepare the Ingredients
- Wash and slice all vegetables as indicated. Have them ready to go, as stir-frying is quick.
Step 2: Cook the Turkey
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Add the ground turkey to the skillet. Cook for 5–7 minutes, breaking it apart with a spatula, until it is browned and cooked through. Season with salt and pepper.
Step 3: Add Vegetables
- Add the sliced bell pepper, broccoli florets, snap peas, and carrot to the skillet. Stir-fry for 3–5 minutes, or until the vegetables are tender-crisp.
- Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.
Step 4: Add Sauce
- In a small bowl, combine the soy sauce and oyster sauce (if using). Pour the sauce over the turkey and vegetables.
- Stir in the cornstarch mixture and cook for another 1–2 minutes, or until the sauce has thickened slightly.
Step 5: Serve
- Remove from heat and serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds if desired.
