- 1 lb ground turkey
- 4 large eggs
- 1 cup bell peppers (diced, any color)
- 1/2 cup onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- Fresh parsley (chopped, for garnish)
- Optional toppings: shredded cheese, avocado slices, hot sauce
Instructions
Step 1: Cook the Turkey
- In a large skillet, heat the olive oil over medium heat.
- Add the ground turkey to the skillet. Cook for about 5–7 minutes, breaking it apart with a spatula until browned and cooked through. Drain any excess fat if necessary.
Step 2: Add Vegetables
- Add the diced onion and bell peppers to the skillet with the turkey. Sauté for about 3–4 minutes until the vegetables are tender.
- Stir in the minced garlic, paprika, Italian seasoning, salt, and pepper. Cook for another 1–2 minutes until fragrant.
Step 3: Cook the Eggs
- Make four small wells in the turkey and vegetable mixture.
- Crack an egg into each well. Cover the skillet with a lid and cook for about 5–7 minutes, or until the eggs are cooked to your desired doneness (runny or firm).
Step 4: Serve
- Remove the skillet from heat and garnish with fresh chopped parsley.
- Add shredded cheese, avocado slices, or hot sauce if desired.
