For the Pie Crust
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (cold, cubed)
- 3–4 tablespoons ice water
For the Filling
- 1 cup corn syrup
- 1 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup chopped pecans
- 1 cup semi-sweet chocolate chips
Instructions
Step 1: Prepare the Pie Crust
- In a large bowl, combine the flour and salt.
- Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Step 2: Preheat Oven
- Preheat your oven to 350°F (175°C).
Step 3: Roll Out the Dough
- On a floured surface, roll out the chilled dough to fit a 9-inch pie pan.
- Transfer the rolled dough to the pan, trimming any excess and crimping the edges as desired.
Step 4: Make the Filling
- In a large mixing bowl, whisk together the corn syrup, granulated sugar, melted butter, eggs, vanilla extract, and salt until smooth.
- Stir in the chopped pecans and chocolate chips until evenly distributed.
Step 5: Assemble and Bake
- Pour the filling mixture into the prepared pie crust.
- Bake in the preheated oven for 50–60 minutes, or until the filling is set and slightly puffed. The center may still be slightly jiggly.
- Remove from the oven and allow the pie to cool completely on a wire rack before slicing.
Step 6: Serve
- Serve slices of the pie plain or with whipped cream if desired.
