For the Salad:
- 12 oz cheese tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup bell pepper (red or green), diced
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/2 cup pepperoni, sliced
- 1/2 cup provolone cheese, cubed
- 1/4 cup fresh parsley, chopped
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions
Step 1: Cook the Tortellini
- In a large pot, bring salted water to a boil.
- Add the cheese tortellini to the boiling water and cook according to package instructions until al dente (usually about 3-5 minutes for fresh tortellini or 7-10 minutes for frozen).
- Drain the tortellini and rinse under cold water to stop the cooking process. Set aside to cool.
Step 2: Prepare the Vegetables and Meats
- While the tortellini is cooling, chop the cherry tomatoes, cucumber, red onion, bell pepper, black olives, salami, and pepperoni into bite-sized pieces.
- In a large mixing bowl, combine the chopped vegetables, meats, and provolone cheese.
Step 3: Make the Dressing
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, sugar, salt, and pepper until well combined.
Step 4: Combine the Salad
- Once the tortellini has cooled, add it to the bowl with the vegetables and meats.
- Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
- Stir in the chopped parsley for added freshness.
Step 5: Chill and Serve
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Give the salad a good toss before serving. Enjoy it chilled or at room temperature.
