Tasty Grinder Tortellini Salad Recipe

For the Salad:

  • 12 oz cheese tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup bell pepper (red or green), diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup pepperoni, sliced
  • 1/2 cup provolone cheese, cubed
  • 1/4 cup fresh parsley, chopped

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon sugar
  • Salt and pepper to taste

 


Instructions

Step 1: Cook the Tortellini

  1. In a large pot, bring salted water to a boil.
  2. Add the cheese tortellini to the boiling water and cook according to package instructions until al dente (usually about 3-5 minutes for fresh tortellini or 7-10 minutes for frozen).
  3. Drain the tortellini and rinse under cold water to stop the cooking process. Set aside to cool.

Step 2: Prepare the Vegetables and Meats

  1. While the tortellini is cooling, chop the cherry tomatoes, cucumber, red onion, bell pepper, black olives, salami, and pepperoni into bite-sized pieces.
  2. In a large mixing bowl, combine the chopped vegetables, meats, and provolone cheese.

Step 3: Make the Dressing

  1. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Italian seasoning, garlic powder, sugar, salt, and pepper until well combined.

Step 4: Combine the Salad

  1. Once the tortellini has cooled, add it to the bowl with the vegetables and meats.
  2. Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  3. Stir in the chopped parsley for added freshness.

Step 5: Chill and Serve

  1. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  2. Give the salad a good toss before serving. Enjoy it chilled or at room temperature.
