- 1 lb baby carrots (or regular carrots, peeled and cut into sticks)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
For the Honey Garlic Butter:
- 1/4 cup unsalted butter (melted)
- 2 tablespoons honey
- 3 cloves garlic (minced)
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon paprika (optional, for added flavor)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Prepare the Carrots
- In a large bowl, toss the baby carrots with olive oil, salt, and pepper until evenly coated.
Step 3: Roast the Carrots
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
Step 4: Make the Honey Garlic Butter
- In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, and paprika (if using) until well combined.
Step 5: Toss and Serve
- Once the carrots are done roasting, remove them from the oven and drizzle the honey garlic butter over the top. Toss to coat the carrots evenly.
