Sweet and Savory Roasted Carrots with Honey Garlic Butter Recipe

  • 1 lb baby carrots (or regular carrots, peeled and cut into sticks)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)

For the Honey Garlic Butter:

  • 1/4 cup unsalted butter (melted)
  • 2 tablespoons honey
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon paprika (optional, for added flavor)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2: Prepare the Carrots

  1. In a large bowl, toss the baby carrots with olive oil, salt, and pepper until evenly coated.

Step 3: Roast the Carrots

  1. Spread the carrots in a single layer on the prepared baking sheet.
  2. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

Step 4: Make the Honey Garlic Butter

  1. In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, and paprika (if using) until well combined.

Step 5: Toss and Serve

  1. Once the carrots are done roasting, remove them from the oven and drizzle the honey garlic butter over the top. Toss to coat the carrots evenly.
  2. Serve warm as a delicious side dish!
