  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup fresh strawberries, chopped (plus extra for garnish)
  • 1/2 cup white chocolate chips (optional)

 


Instructions

Step 1: Preheat Oven

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Prepare the Cookie Dough

  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Gently fold in the softened cream cheese, chopped strawberries, and white chocolate chips if using, until evenly distributed.

Step 3: Bake the Cookies

  1. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
  3. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.

Step 4: Serve

  1. Garnish with additional chopped strawberries if desired.
  2. Serve warm or at room temperature and enjoy.
