Ingredients

• 2 cups rolled oats
• 1/2 cup milk (dairy or non-dairy)
• 1/2 cup plain Greek yogurt (or cream cheese, softened)
• 1/4 cup maple syrup or honey
• 2 large eggs
• 1 teaspoon vanilla extract
• 1 teaspoon baking powder
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt
• 1 cup fresh strawberries, hulled and sliced (or frozen strawberries, thawed)
• 1/4 cup chocolate chips or white chocolate chips (optional, for topping)


Instructions

• Preheat Oven: Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or similar-sized casserole dish.
• Mix Wet Ingredients: In a large mixing bowl, combine the milk, Greek yogurt (or cream cheese), maple syrup (or honey), eggs, and vanilla extract. Whisk until smooth and well combined.
• Add Dry Ingredients: Stir in the rolled oats, baking powder, cinnamon, and salt until everything is evenly mixed.
• Fold in Strawberries: Gently fold in the sliced strawberries, being careful not to mash them too much.
• Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
• Top with Chocolate Chips: If using, sprinkle chocolate chips or white chocolate chips on top.
• Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
• Cool and Slice: Allow the baked oatmeal to cool for a few minutes before slicing into squares.
