For the Pudding:

  • 8 oz (225 g) pitted dates, chopped
  • 1 cup (240 ml) boiling water
  • 1 teaspoon baking soda
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For the Toffee Sauce:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup brown sugar, packed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

 


Instructions

Step 1: Prepare the Dates

  1. Soak Dates: In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes to soften the dates.

Step 2: Make the Pudding Batter

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or individual ramekins.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  4. Combine Wet and Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Add Date Mixture: Fold in the soaked date mixture (including the water) until well incorporated.

Step 3: Bake the Pudding

  1. Pour Batter: Pour the batter into the prepared baking dish or divide it among the ramekins.
  2. Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 4: Make the Toffee Sauce

  1. Combine Ingredients: In a saucepan over medium heat, combine the butter, brown sugar, and heavy cream. Stir until the butter is melted and the mixture is smooth.
  2. Simmer: Bring the sauce to a gentle simmer and let it cook for about 5 minutes, stirring frequently. Remove from heat and stir in the vanilla extract.

Step 5: Serve

  1. Drizzle Sauce: Once the pudding is baked, remove it from the oven and let it cool slightly. Cut into squares or serve individual ramekins.
  2. Top with Sauce: Drizzle the warm toffee sauce generously over the pudding.
  3. Garnish: Serve with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
