- 1 medium head of cauliflower, riced (or 4 cups pre-riced cauliflower)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- 2 green onions, sliced (for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
Step 1: Prepare the Cauliflower Rice
- Rice the Cauliflower: If using a whole head of cauliflower, remove the leaves and stem, then cut it into florets. Use a food processor to pulse the florets until they resemble rice grains. Alternatively, you can buy pre-riced cauliflower for convenience.
Step 2: Cook the Turkey
- Heat Olive Oil: In a large skillet, heat the olive oil over medium heat.
- Add Onion and Garlic: Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Cook Ground Turkey: Add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until it’s no longer pink, about 5-7 minutes.
Step 3: Add Vegetables and Spices
- Add Bell Pepper: Stir in the diced bell pepper and cook for another 2-3 minutes until softened.
- Season: Add the riced cauliflower, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine all ingredients.
- Cook Together: Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender and heated through.
Step 4: Serve
- Garnish: Remove from heat and garnish with sliced green onions and fresh cilantro, if desired.
