Instructions
Step 1: Prepare the Cucumber
- Halve the cucumbers lengthwise and scoop out the seeds using a spoon to create a boat shape. Set aside.
Step 2: Prepare the Shrimp Filling
- In a mixing bowl, combine the cooked shrimp, mayonnaise, Sriracha sauce, lime juice, garlic powder, salt, and pepper. Mix until the shrimp are well coated.
Step 3: Assemble the Cucumber Boats
- Spoon the spicy shrimp mixture into each cucumber half, filling them generously.
Step 4: Garnish and Serve
- Sprinkle chopped green onions and sesame seeds (if using) over the filled cucumber boats.
- Serve immediately as a refreshing appetizer or snack.
