Ingredients
For the Chicken
• 1 pound boneless, skinless chicken breasts
• 1 cup buttermilk (or regular milk)
• 1 cup all-purpose flour
• 1 teaspoon paprika
• 1/2 teaspoon cayenne pepper (adjust to taste)
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• Salt and pepper to taste
• Vegetable oil (for frying)
For the Bang Bang Sauce
• 1/2 cup mayonnaise
• 1/4 cup sweet chili sauce
• 1 tablespoon sriracha (adjust for spice preference)
• 1 teaspoon lime juice
• Salt to taste
For Assembly
• 4 sandwich buns (brioche or your choice)
• Lettuce leaves
• Sliced tomatoes
• Sliced cucumbers (optional)
• Pickles (optional)
Instructions
Step 1: Marinate the Chicken
• Place the chicken breasts in a bowl and cover them with buttermilk. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator) to tenderize.
Step 2: Prepare the Bang Bang Sauce
• In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, and a pinch of salt. Mix well and adjust the spice level to your liking. Set aside.
Step 3: Prepare the Chicken
• In a shallow dish, mix together the flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
• Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating well. Shake off any excess flour.
Step 4: Fry the Chicken
• In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot (about 350°F or 175°C).
• Carefully add the chicken to the hot oil, cooking in batches if necessary. Fry for about 5–7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
• Remove the chicken from the skillet and place it on a paper towel-lined plate to drain excess oil.
Step 5: Assemble the Sandwich
• Spread a generous amount of Bang Bang sauce on the bottom half of each sandwich bun.
• Place a piece of fried chicken on top of the sauce.
• Add lettuce, sliced tomatoes, cucumbers, and pickles as desired. Drizzle more Bang Bang sauce on top if you like.
• Place the top half of the bun on the sandwich.
