Smashburger Quesadillas Recipe

Ingredients

For the Quesadillas:
• 1 lb (450g) ground beef (80/20 blend recommended)
• 4 large flour tortillas
• 2 cups shredded cheddar cheese (or a cheese blend)
• 1 tablespoon Worcestershire sauce
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper, to taste
• Cooking oil (for frying)

Optional Toppings:
• Sliced jalapeños
• Diced tomatoes
• Chopped green onions
• Sour cream
• Salsa
• Avocado or guacamole


Instructions

Step 1: Prepare the Beef Mixture
• In a mixing bowl, combine the ground beef with Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined; do not overwork the meat.

Step 2: Cook the Beef
• Preheat a large skillet or griddle over medium-high heat. Add a little cooking oil to the pan.
• Divide the beef mixture into four equal portions. Place each portion in the skillet and smash it down with a spatula to create a thin patty. Cook for about 3-4 minutes until browned, then flip and cook for an additional 2-3 minutes. Ensure the patties are cooked through.
• Once cooked, remove the patties from the skillet and chop them into small pieces.

Step 3: Assemble the Quesadillas
• In the same skillet, reduce the heat to medium. Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla, then add half of the chopped burger mixture. Top with more cheese and place a second tortilla on top.
• Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese is melted. Carefully flip the quesadilla using a large spatula and cook the other side for another 3-4 minutes.

Step 4: Repeat
• Remove the cooked quesadilla from the skillet and keep warm. Repeat the process with the remaining ingredients to make two more quesadillas.

Step 5: Serve
• Cut the quesadillas into wedges and serve with your choice of toppings such as sour cream, salsa, diced tomatoes, jalapeños, and avocado.
