Slow Roasted Prime Rib Recipe

For the Prime Rib

  • 1 (4-5 lb) prime rib roast (bone-in or boneless)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

For Serving

  • Horseradish sauce (optional)
  • Au jus or beef gravy (optional)

 


Instructions

Step 1: Prepare the Prime Rib

  1. Remove the prime rib from the refrigerator at least 1 hour before cooking to allow it to come to room temperature.
  2. Preheat your oven to 250°F (120°C).

Step 2: Season the Roast

  1. In a small bowl, mix together minced garlic, olive oil, kosher salt, black pepper, rosemary, thyme, onion powder, and garlic powder to form a paste.
  2. Rub the seasoning mixture all over the prime rib, ensuring it is well coated.

Step 3: Roast the Prime Rib

  1. Place the seasoned prime rib on a roasting rack in a roasting pan, bone side down if using bone-in.
  2. Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches:
  • 120°F (49°C) for rare
  • 130°F (54°C) for medium-rare
  • 140°F (60°C) for medium
  • 150°F (66°C) for medium-well

  • Use a meat thermometer inserted into the thickest part of the roast to check the temperature.

 

Step 4: Rest the Meat

  1. Once the desired temperature is reached, remove the prime rib from the oven and tent it loosely with aluminum foil.
  2. Let it rest for at least 20-30 minutes to allow the juices to redistribute.

Step 5: Slice and Serve

  1. Using a sharp carving knife, slice the prime rib into thick slices.
  2. Serve with horseradish sauce and au jus or beef gravy on the side, if desired.
