For the Prime Rib
- 1 (4-5 lb) prime rib roast (bone-in or boneless)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
For Serving
- Horseradish sauce (optional)
- Au jus or beef gravy (optional)
Instructions
Step 1: Prepare the Prime Rib
- Remove the prime rib from the refrigerator at least 1 hour before cooking to allow it to come to room temperature.
- Preheat your oven to 250°F (120°C).
Step 2: Season the Roast
- In a small bowl, mix together minced garlic, olive oil, kosher salt, black pepper, rosemary, thyme, onion powder, and garlic powder to form a paste.
- Rub the seasoning mixture all over the prime rib, ensuring it is well coated.
Step 3: Roast the Prime Rib
- Place the seasoned prime rib on a roasting rack in a roasting pan, bone side down if using bone-in.
- Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches:
- 120°F (49°C) for rare
- 130°F (54°C) for medium-rare
- 140°F (60°C) for medium
- 150°F (66°C) for medium-well
- Use a meat thermometer inserted into the thickest part of the roast to check the temperature.
Step 4: Rest the Meat
- Once the desired temperature is reached, remove the prime rib from the oven and tent it loosely with aluminum foil.
- Let it rest for at least 20-30 minutes to allow the juices to redistribute.
Step 5: Slice and Serve
- Using a sharp carving knife, slice the prime rib into thick slices.
- Serve with horseradish sauce and au jus or beef gravy on the side, if desired.
