Ingredients
• 1 pound steak (such as sirloin or flank steak), cut into bite-sized pieces
• 4 cups potatoes, peeled and sliced (about 4 medium potatoes)
• 1 cup shredded cheddar cheese
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 1 cup beef broth
• 1/2 cup sour cream
• 1 teaspoon Worcestershire sauce
• 1 teaspoon dried thyme
• Salt and pepper, to taste
• 2 tablespoons olive oil (for browning the steak)
• Fresh parsley, chopped (for garnish, optional)
Instructions
Step 1: Brown the Steak
1. Heat Oil: In a skillet over medium-high heat, heat the olive oil.
2. Brown Steak: Add the steak pieces and season with salt and pepper. Sear the steak for about 3-4 minutes until browned on all sides. Transfer the browned steak to the slow cooker.
Step 2: Prepare the Casserole
1. Layer Ingredients: In the slow cooker, layer the sliced potatoes, chopped onion, and minced garlic over the browned steak.
2. Mix Sauce: In a separate bowl, combine the beef broth, sour cream, Worcestershire sauce, dried thyme, and additional salt and pepper. Pour this mixture over the layered ingredients in the slow cooker.
3. Add Cheese: Sprinkle half of the shredded cheddar cheese on top.
Step 3: Cook
1. Cover and Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the steak is cooked through.
Step 4: Add Remaining Cheese
1. Finish with Cheese: About 15 minutes before serving, sprinkle the remaining cheddar cheese on top of the casserole. Cover and let it melt.
Step 5: Serve
1. Garnish: Once cooked, give the casserole a gentle stir and garnish with fresh parsley if desired.
