Ingredients
• 1 pound ground beef (or turkey)
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 (10.5-ounce) can cream of mushroom soup (or cream of chicken soup)
• 1 (15-ounce) can corn, drained
• 1 (15-ounce) can diced tomatoes (with or without green chilies)
• 1 teaspoon chili powder
• 1 teaspoon paprika
• Salt and pepper to taste
• 2 cups shredded cheddar cheese
• 1 (32-ounce) bag frozen tater tots
• Fresh parsley or green onions for garnish (optional)
Instructions
Step 1: Brown the Beef
• Cook the Ground Beef: In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the beef is fully cooked. Drain any excess fat.
Step 2: Prepare the Slow Cooker
• Combine Ingredients: In the slow cooker, combine the browned beef, cream of mushroom soup, drained corn, diced tomatoes, chili powder, paprika, salt, and pepper. Stir well to combine.
Step 3: Cook
• Set the Slow Cooker: Cover and cook on low for 4-6 hours or on high for 2-3 hours.
Step 4: Add Tater Tots and Cheese
• Add Tater Tots: About 30 minutes before serving, spread the frozen tater tots evenly over the top of the casserole.
• Top with Cheese: Sprinkle the shredded cheddar cheese over the tater tots.
Step 5: Finish and Serve
• Cover and Cook: Cover and cook for an additional 30 minutes, or until the tater tots are golden brown and the cheese is melted.
• Garnish and Serve: Garnish with fresh parsley or green onions if desired. Serve hot.
