Ingredients
For the Pizza Dough:
• 1 1/2 cups warm water (110°F/45°C)
• 2 teaspoons active dry yeast
• 1 teaspoon sugar
• 3 1/2 to 4 cups all-purpose flour
• 2 tablespoons olive oil
• 1 teaspoon salt
For the Pizza Topping:
• 1 head of garlic
• 2 tablespoons olive oil (for roasting)
• 1 cup ricotta cheese
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• 4 cups fresh spinach (washed and dried)
• 1 teaspoon dried oregano
• 1/2 teaspoon red pepper flakes (optional)
• Salt and pepper to taste
• Fresh basil leaves (for garnish, optional)
Instructions
Step 1: Prepare the Pizza Dough
• Activate Yeast: In a small bowl, combine warm water, yeast, and sugar. Let it sit for about 5-10 minutes until foamy.
• Mix Dough: In a large mixing bowl, combine 3 1/2 cups of flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
• Knead: Transfer the dough to a floured surface and knead for about 5-7 minutes, adding more flour if necessary, until the dough is smooth and elastic.
• Let Rise: Place the dough in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 2: Roast the Garlic
• Prepare Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves.
• Roast: Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for about 20-25 minutes, or until the cloves are soft and caramelized. Let cool slightly, then squeeze the roasted garlic into a bowl and mash with a fork.
Step 3: Prepare the Pizza Topping
• Sauté Spinach: In a skillet, heat a tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted. Season with salt, pepper, and red pepper flakes (if using). Remove from heat.
• Mix Cheese: In a bowl, combine the ricotta cheese, roasted garlic, dried oregano, and a pinch of salt and pepper.
Step 4: Assemble and Bake the Pizza
• Preheat Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
• Roll Out Dough: Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
• Add Toppings: Carefully transfer the rolled-out dough to a piece of parchment paper. Spread the ricotta mixture evenly over the dough, then top with sautéed spinach, shredded mozzarella, and grated Parmesan cheese.
• Bake: Transfer the pizza (with parchment) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
Step 5: Serve
• Garnish: Remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired.
