- 4 large bell peppers (any color)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 1 cup spinach (fresh or frozen, chopped)
- 1 teaspoon Italian seasoning
- 1 clove garlic (minced)
- Salt and pepper (to taste)
- 1 cup marinara sauce (for serving, optional)
- Fresh basil (for garnish, optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Prepare the Peppers
- Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
Step 3: Make the Filling
- In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella cheese, grated Parmesan cheese, chopped spinach, Italian seasoning, minced garlic, salt, and pepper. Mix until well combined.
Step 4: Stuff the Peppers
- Spoon the ricotta mixture into each bell pepper, packing it in gently. Top each pepper with the remaining mozzarella cheese.
Step 5: Bake the Peppers
- If desired, pour marinara sauce around the base of the peppers in the baking dish for added flavor and moisture.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10–15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
Step 6: Serve
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired and serve warm.
