Instructions

Step 1: Prepare the Ricotta Mixture

  1. Mix Ingredients: In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and almond extract (if using). Mix until smooth and well combined.

Step 2: Form the Bites

  1. Shape Bites: Using a small cookie scoop or your hands, form the ricotta mixture into small balls (about 1 inch in diameter).
  2. Coat with Pistachios: Roll each ricotta ball in the chopped pistachios until fully coated.

Step 3: Chill
