- Salt and pepper, to taste
- 1 cup mixed vegetables (such as bell peppers, broccoli, or carrots)
- Fresh parsley (for garnish, optional)
Instructions
Step 1: Cook the Rice
- Prepare Rice: Cook the brown rice according to package instructions. This usually takes about 20-25 minutes.
Step 2: Cook the Chicken
- Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
- Season Chicken: Add the chicken pieces to the skillet, seasoning with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.
- Add BBQ Sauce: Pour the honey BBQ sauce over the cooked chicken, stirring to coat evenly. Cook for an additional 2-3 minutes until heated through.
Step 3: Add Vegetables
- Add Mixed Vegetables: Stir in the mixed vegetables and cook for another 3-5 minutes, or until the vegetables are tender but still crisp.
Step 4: Serve
- Combine and Serve: Serve the honey BBQ chicken over a bed of brown rice. Garnish with fresh parsley if desired.
