  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 8 oz cream cheese (softened)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for rolling)
  • 1/4 cup powdered sugar (for dusting)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2: Prepare the Cookie Dough

  1. In a large mixing bowl, combine the yellow cake mix, softened butter, egg, cream cheese, and vanilla extract. Mix until well combined and a soft dough forms.

Step 3: Shape the Cookies

  1. For easier handling, chill the dough in the refrigerator for about 30 minutes (optional but recommended).
  2. Scoop out tablespoon-sized portions of dough and roll them into balls.
  3. Roll each ball in powdered sugar until fully coated.

Step 4: Bake the Cookies

  1. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

Step 5: Cool and Serve

  1. Once out of the oven, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Dust with additional powdered sugar if desired.
  2. Serve warm or at room temperature. These cookies are best enjoyed fresh!
