- 2 large cucumbers (sliced thinly)
- 1 cup crab meat (fresh or canned, drained)
- 1/4 cup red onion (finely chopped)
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard

- 1 teaspoon Old Bay seasoning (or to taste)
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
Step 1: Prepare the Cucumbers
- Wash and thinly slice the cucumbers. If desired, you can peel them for a smoother texture.
Step 2: Make the Dressing
- In a medium bowl, mix together the mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper until well combined.
Step 3: Assemble the Salad
- In a large bowl, combine the sliced cucumbers, crab meat, and red onion.
- Pour the dressing over the cucumber and crab mixture. Gently toss to coat all the ingredients evenly.
Step 4: Serve
- Transfer the salad to a serving dish, garnish with fresh parsley, and serve immediately. This salad can also be chilled in the refrigerator for about 30 minutes before serving for an even fresher taste.
