- 1 cup black beans (canned, rinsed and drained)
- 1/2 cup peanut butter (or almond butter)
- 1/4 cup honey (or maple syrup)
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup protein powder (chocolate or vanilla)
- 1/4 cup chocolate chips (optional)
Instructions
Step 1: Preheat the Oven
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray with cooking spray.
Step 2: Prepare the Batter
- Blend Ingredients: In a food processor, combine the black beans, peanut butter, honey (or maple syrup), cocoa powder, baking powder, salt, vanilla extract, and protein powder. Blend until smooth and creamy.
- Fold in Chocolate Chips: If using, fold in the chocolate chips with a spatula until evenly distributed.
Step 3: Bake
- Fill Muffin Tin: Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 3/4 full.
- Bake: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Step 4: Cool and Serve
- Cool: Allow the brownie bites to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
- Enjoy: Serve as a snack or dessert. Store leftovers in an airtight container in the refrigerator.
