Protein Brownie Bites Recipe

  • 1 cup black beans (canned, rinsed and drained)
  • 1/2 cup peanut butter (or almond butter)
  • 1/4 cup honey (or maple syrup)
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1/4 cup chocolate chips (optional)

 


Instructions

Step 1: Preheat the Oven

 

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray with cooking spray.

 

 

Step 2: Prepare the Batter

 

  1. Blend Ingredients: In a food processor, combine the black beans, peanut butter, honey (or maple syrup), cocoa powder, baking powder, salt, vanilla extract, and protein powder. Blend until smooth and creamy.
  2. Fold in Chocolate Chips: If using, fold in the chocolate chips with a spatula until evenly distributed.

 

 

Step 3: Bake

 

  1. Fill Muffin Tin: Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  2. Bake: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

 

 

Step 4: Cool and Serve

 

  1. Cool: Allow the brownie bites to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
  2. Enjoy: Serve as a snack or dessert. Store leftovers in an airtight container in the refrigerator.
