For the Cookie Base:
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pistachios (unsalted)
For the Topping:
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios (for garnish)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Cookie Base
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the chopped pistachios until evenly distributed throughout the dough.
Step 3: Bake the Cookie Bars
- Spread the cookie dough evenly into the prepared baking dish, smoothing the top.
- Bake in the preheated oven for 25–30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Step 4: Add the Topping
- Once the bars are cool, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Pour the melted white chocolate over the cooled cookie bars, spreading it evenly with a spatula.
- Sprinkle the additional chopped pistachios on top of the white chocolate while it’s still warm.
Step 5: Slice and Serve
- Allow the topping to set for about 30 minutes, then slice the bars into squares.
