For the Brownie Base:
- 1 cup (2 sticks) unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the Pecan Pie Filling:
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups pecans, chopped
For the Topping:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil (for melting chocolate)
Instructions
Step 1: Prepare the Brownie Base
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
- In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the granulated sugar until well combined.
- Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely in the pan.
Step 2: Prepare the Pecan Pie Filling
- In a large mixing bowl, combine the corn syrup, brown sugar, eggs, melted butter, and vanilla extract. Whisk until smooth.
- Stir in the chopped pecans until evenly distributed.
Step 3: Assemble the Brownie Bombs
- Once the brownies have cooled, cut them into squares. Using a small spoon or melon baller, scoop out a small amount from the center of each brownie square to create a well.
- Spoon the pecan pie filling into each brownie square, filling them generously.
Step 4: Top with Chocolate
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Drizzle the melted chocolate over the filled brownie bombs or dip each one into the chocolate to coat completely. Allow the excess chocolate to drip off.
Step 5: Chill and Serve
- Place the brownie bombs in the refrigerator for about 30 minutes to allow the chocolate to set.
