- 1 large flour tortilla (or whole wheat tortilla)
- 8 ounces cream cheese, softened
- 1/2 cup fresh spinach, chopped
- 1/4 cup dried cranberries, chopped
- 1/4 cup shredded carrots (optional)
- 1 tablespoon honey (or maple syrup)
- 1 tablespoon fresh lemon juice
- Salt and pepper, to taste
- Optional: 1/4 cup chopped walnuts or pecans for added crunch
Instructions
Step 1: Prepare the Filling
- Mix Ingredients: In a medium bowl, combine the softened cream cheese, chopped spinach, dried cranberries, shredded carrots (if using), honey, lemon juice, salt, and pepper. Mix until well combined.
Step 2: Assemble the Pinwheels
- Spread Filling: Lay the tortilla flat on a clean surface. Spread the cream cheese mixture evenly over the entire surface of the tortilla.
- Roll Up: Starting at one end, tightly roll the tortilla into a log shape. Make sure to roll it as tightly as possible to keep the filling inside.
Step 3: Chill and Slice
- Chill: Wrap the rolled tortilla in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Slice: Once chilled, remove the plastic wrap and slice the roll into 1-inch pinwheels.
Step 4: Serve
- Arrange on Platter: Place the pinwheels on a serving platter and enjoy!
