Oven-Roasted Sweet Potatoes Recipe

  • 2 large sweet potatoes (peeled and diced into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika (or smoked paprika)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried thyme (or rosemary, optional)
  • Fresh parsley (chopped, for garnish, optional)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Step 2: Prepare the Sweet Potatoes

  1. Peel and dice the sweet potatoes into 1-inch cubes. Try to keep the pieces uniform for even cooking.

Step 3: Season the Sweet Potatoes

  1. In a large bowl, combine the diced sweet potatoes with olive oil, salt, black pepper, paprika, garlic powder (if using), and dried thyme (if using). Toss until the sweet potatoes are evenly coated.

Step 4: Roast

  1. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.
  2. Roast in the preheated oven for 25–30 minutes, stirring halfway through, until the sweet potatoes are golden brown and fork-tender.

Step 5: Serve

  1. Remove from the oven and let cool slightly. Garnish with fresh chopped parsley if desired. Serve warm as a side dish.
