For the Soup:
- 1 pound ground beef or Italian sausage
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 8 ounces lasagna noodles (broken into pieces)
- 1 can (15 oz) ricotta cheese
- 1 cup shredded mozzarella cheese (plus more for topping)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley (for garnish, optional)
Instructions
Step 1: Cook the Meat
- In a large pot or Dutch oven, over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the chopped onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
Step 2: Add the Base Ingredients
- Add the crushed tomatoes, chicken or vegetable broth, Italian seasoning, and red pepper flakes (if using) to the pot. Stir to combine and bring to a simmer.
Step 3: Add the Noodles
- Once the soup is simmering, add the broken lasagna noodles. Cook according to the package instructions, usually about 8-10 minutes, until the noodles are tender.
Step 4: Add the Cheeses
- Once the noodles are cooked, reduce the heat to low. Stir in the ricotta cheese, shredded mozzarella, and grated Parmesan cheese until melted and well combined.
- Season with salt and pepper to taste.
Step 5: Serve
- Ladle the soup into bowls and top with additional mozzarella cheese and fresh basil or parsley if desired.
