No Bake Brownie Bites Recipe

  • 1 cup dates, pitted
  • 1 cup walnuts (or almonds)
  • 1/2 cup cocoa powder
  • 1/4 cup almond butter (or peanut butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips (optional)
  • Chopped nuts or shredded coconut (optional, for rolling)

 


Instructions

Step 1: Prepare the Mixture

 

  1. Process Dates and Nuts: In a food processor, combine the pitted dates and walnuts. Pulse until the mixture is finely chopped and sticky.
  2. Add Cocoa and Other Ingredients: Add the cocoa powder, almond butter, vanilla extract, and salt to the mixture. Process until everything is well combined and forms a dough-like consistency. If the mixture is too dry, you can add a teaspoon of water or more almond butter.
  3. Mix in Chocolate Chips: If using, fold in the chocolate chips with a spatula or by pulsing a few times in the food processor.

 

 

Step 2: Form the Bites

 

  1. Shape the Mixture: Using your hands, take small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter).
  2. Optional Coating: If desired, roll the brownie bites in chopped nuts or shredded coconut.

 

 

Step 3: Chill and Serve

 

  1. Chill: Place the brownie bites on a plate or in an airtight container and refrigerate for at least 30 minutes to firm up.
  2. Serve: Enjoy chilled or at room temperature. Store leftovers in the refrigerator for up to 1 week.
