  • 1 large egg
  • 2 tablespoons milk (or dairy-free alternative)
  • 1 tablespoon unsweetened applesauce (or yogurt)
  • 1/2 teaspoon vanilla extract
  • Chocolate chips (optional, for added sweetness)

 


Instructions

Step 1: Mix the Ingredients

  1. Combine Dry Ingredients: In a microwave-safe mug, mix together the almond flour, protein powder, cocoa powder (if using), baking powder, and sweetener until well combined.
  2. Add Wet Ingredients: Add the egg, milk, applesauce, and vanilla extract to the dry ingredients. Stir until you have a smooth batter. If desired, fold in a few chocolate chips.

Step 2: Microwave the Cake

  1. Microwave: Place the mug in the microwave and cook on high for 1 minute. Check for doneness; if the center is still wet, continue to microwave in 10–15 second intervals until fully cooked. The cake should be set but moist.

Step 3: Serve

  1. Cool Slightly: Allow the mug cake to cool for a minute or two before enjoying.
  2. Optional Toppings: Top with a dollop of yogurt, whipped cream, or additional chocolate chips if desired.
