Mediterranean Shrimp Recipe

Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup bell peppers (sliced; any color)
  • 1/2 cup red onion (sliced)
  • 1 teaspoon dried oregano
  • Salt and pepper (to taste)
  • Juice of 1 lemon
  • 1/4 cup fresh parsley (chopped, for garnish)
  • Feta cheese (crumbled, for topping, optional)

 


Instructions

Step 1: Sauté the Vegetables

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sliced red onion to the skillet. Sauté for about 2–3 minutes until the onion is translucent.

Step 2: Add Shrimp and Vegetables

  1. Stir in the shrimp, sliced bell peppers, and halved cherry tomatoes. Season with dried oregano, salt, and pepper.
  2. Cook for about 5–7 minutes, or until the shrimp turn pink and are cooked through, stirring occasionally.

Step 3: Finish with Lemon

  1. Squeeze the juice of one lemon over the shrimp and vegetables. Stir to combine and cook for an additional minute.

Step 4: Serve

  1. Remove from heat and garnish with chopped fresh parsley and crumbled feta cheese if desired. Serve warm.
