- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1 cup bell peppers (sliced; any color)
- 1/2 cup red onion (sliced)
- 1 teaspoon dried oregano
- Salt and pepper (to taste)
- Juice of 1 lemon
- 1/4 cup fresh parsley (chopped, for garnish)
- Feta cheese (crumbled, for topping, optional)
Instructions
Step 1: Sauté the Vegetables
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sliced red onion to the skillet. Sauté for about 2–3 minutes until the onion is translucent.
Step 2: Add Shrimp and Vegetables
- Stir in the shrimp, sliced bell peppers, and halved cherry tomatoes. Season with dried oregano, salt, and pepper.
- Cook for about 5–7 minutes, or until the shrimp turn pink and are cooked through, stirring occasionally.
Step 3: Finish with Lemon
- Squeeze the juice of one lemon over the shrimp and vegetables. Stir to combine and cook for an additional minute.
Step 4: Serve
- Remove from heat and garnish with chopped fresh parsley and crumbled feta cheese if desired. Serve warm.
