- 1 pound ground chicken
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Sauté the Aromatics
- Heat Olive Oil: In a large skillet, heat the olive oil over medium heat.
- Cook Onion and Garlic: Add the diced onion and cook for about 3–4 minutes until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
Step 2: Cook the Chicken
- Add Ground Chicken: Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until it is no longer pink, about 5–7 minutes.
- Season: Stir in the dried oregano, thyme, smoked paprika, salt, and pepper. Mix well to combine.
Step 3: Add Vegetables and Cheese
- Add Tomatoes and Olives: Stir in the halved cherry tomatoes and sliced olives. Cook for another 3–4 minutes, until the tomatoes are softened.
- Add Feta: Remove the skillet from heat and sprinkle the crumbled feta cheese over the top. Allow it to melt slightly.
Step 4: Serve
- Garnish: Garnish with fresh parsley before serving.
- Enjoy: Serve warm as a main dish, either on its own or with a side of sautéed greens.
