- 1 pound boneless, skinless chicken breasts (sliced into thin strips)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 package (9 ounces) cheese tortellini (fresh or frozen)
- Fresh basil (for garnish)
Instructions
Step 1: Cook the Chicken
- Heat the olive oil over medium-high heat in a large skillet.
- Season the sliced chicken with garlic powder, Italian seasoning, salt, and pepper.
- Add the chicken to the skillet and cook for 5–7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Step 2: Prepare the Sauce
- In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 2 minutes until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Stir in the grated Parmesan cheese and let the sauce simmer for about 5 minutes until slightly thickened.
Step 3: Cook the Tortellini
- In a separate pot, cook the cheese tortellini according to package instructions.
- Drain and set aside.
Step 4: Combine Everything
- Add the cooked chicken and tortellini to the sauce, stirring gently to coat evenly.
- Cook for an additional 2–3 minutes to heat through.
Step 5: Serve
