For the Chicken:
- 2 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
For the Sauce:
- 2 tablespoons butter
- 3 cloves garlic (minced)
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper (to taste)
- Fresh basil (for garnish)
For the Pasta:
- 8 ounces pasta (fettuccine, penne, or your choice)
- Water (for boiling pasta)
- Salt (for pasta water)
Instructions
Step 1: Cook the Pasta
- Boil Water: In a large pot, bring salted water to a boil.
- Cook Pasta: Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Step 2: Prepare the Chicken
- Season Chicken: Season the chicken breasts with salt, pepper, Italian seasoning, and garlic powder on both sides.
- Sear Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5–7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
Step 3: Make the Sauce
- Sauté Garlic: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2–3 minutes.
- Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Add Cheese and Seasoning: Stir in the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
Step 4: Combine Everything
- Slice Chicken: While the sauce is simmering, slice the cooked chicken breasts into strips.
- Add Chicken and Pasta: Add the sliced chicken and cooked pasta to the skillet with the sauce. Toss everything together to coat the pasta and chicken in the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
Step 5: Serve
- Plate the Dish: Serve the Marry Me Chicken Pasta hot, garnished with fresh basil and additional Parmesan cheese if desired.
