Marinated Tomatoes Recipe

  • 4 large ripe tomatoes (sliced or chopped)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar (or balsamic vinegar)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano (or fresh, chopped)
  • Salt and pepper (to taste)
  • Fresh basil leaves (for garnish, optional)

 


Instructions

Step 1: Prepare the Tomatoes

  1. Wash and slice the tomatoes into wedges or chop them into bite-sized pieces. Place them in a large bowl.

Step 2: Make the Marinade

  1. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.

Step 3: Marinate the Tomatoes

  1. Pour the marinade over the tomatoes and gently toss to coat them evenly.
  2. Let the tomatoes marinate at room temperature for at least 30 minutes to allow the flavors to develop. For best results, marinate for up to 2 hours.

Step 4: Serve

  1. Before serving, garnish with fresh basil leaves if desired. Enjoy the marinated tomatoes as a side dish or topping.
