Ingredients
For the Wings:
• 2 pounds chicken wings
• 1 tablespoon olive oil
• Salt and pepper, to taste
For the Mango Habanero Sauce:
• 1 cup fresh or frozen mango chunks
• 1–2 habanero peppers, seeds removed (adjust based on heat preference)
• 1/4 cup honey
• 1/4 cup apple cider vinegar
• 2 tablespoons soy sauce
• 1 tablespoon lime juice
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper, to taste
Instructions
Step 1: Prepare the Chicken Wings
1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
2. Season Wings: In a large bowl, toss the chicken wings with olive oil, salt, and pepper until evenly coated.
Step 2: Bake the Wings
1. Arrange Wings: Place the seasoned wings in a single layer on the wire rack.
2. Bake: Bake in the preheated oven for 30-40 minutes, flipping halfway through, until the wings are crispy and cooked through (internal temperature should reach 165°F or 74°C).
Step 3: Make the Mango Habanero Sauce
1. Blend Ingredients: In a blender or food processor, combine the mango chunks, habanero peppers, honey, apple cider vinegar, soy sauce, lime juice, garlic powder, onion powder, and a pinch of salt and pepper. Blend until smooth.
2. Adjust Spice: Taste the sauce and adjust the heat by adding more habanero if desired.
Step 4: Toss the Wings in Sauce
1. Coat Wings: Once the wings are cooked, transfer them to a large bowl. Pour the mango habanero sauce over the wings and toss until they are evenly coated.
2. Optional Broil: For extra caramelization, you can return the sauced wings to the oven and broil for an additional 2-3 minutes.
Step 5: Serve
1. Garnish: Serve the wings hot, garnished with fresh cilantro or lime wedges if desired.
