- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 4 cups fresh spinach (washed and chopped)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried dill (or fresh dill, chopped)
- Salt and pepper (to taste)
- Lemon wedges (for serving)
Instructions
Step 1: Cook the Salmon
- Heat Olive Oil: In a large skillet, heat the olive oil over medium-high heat.
- Season Salmon: Season the salmon fillets with salt and pepper.
- Sear the Salmon: Add the salmon fillets to the skillet, skin side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
Step 2: Prepare the Creamy Spinach Sauce
- Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add Cream and Spinach: Pour in the heavy cream and bring to a gentle simmer. Add the chopped spinach and cook until wilted, about 2-3 minutes.
- Stir in Cheese and Dill: Stir in the grated Parmesan cheese and dried dill. Cook for another 1-2 minutes until the sauce is creamy and slightly thickened. Season with salt and pepper to taste.
Step 3: Combine and Serve
- Return Salmon to Skillet: Place the cooked salmon fillets back into the skillet with the creamy spinach sauce, spooning some sauce over the top.
- Serve: Serve immediately with lemon wedges on the side for squeezing over the salmon.
