For the Dough
- 1 1/2 cups almond flour
- 1 cup shredded mozzarella cheese
- 2 ounces cream cheese (softened)
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt (to taste)
For the Filling
- 1/2 cup pizza sauce (low carb)
- 1 cup shredded mozzarella cheese
- 1/2 cup pepperoni slices (or other toppings like mushrooms, olives, or bell peppers)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- In a separate bowl, whisk together the almond flour, baking powder, Italian seasoning, garlic powder, and salt. Add the melted cheese mixture and the egg. Mix until a dough forms.
Step 2: Roll Out the Dough
- Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
- Spread the pizza sauce evenly over the dough, leaving a small border around the edges. Sprinkle the shredded mozzarella cheese and pepperoni (or your choice of toppings) over the sauce. If using, sprinkle Parmesan cheese on top.
Step 3: Roll and Bake
- Carefully roll the dough tightly from one long side to the other, forming a log. Use the parchment paper to help guide the roll.
- Cut the rolled dough into 1-inch slices and place them cut-side up on the prepared baking sheet.
- Bake in the preheated oven for 15–20 minutes, or until the rolls are golden brown and the cheese is bubbly.
Step 4: Serve
- Allow the pizza rolls to cool for a few minutes before serving.
- Serve warm with additional pizza sauce for dipping.
