Lemon Poppy Seed Energy Bites Recipe

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

 


Instructions

Combine Ingredients

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt.
  2. Stir until all ingredients are well combined.

Form the Bites

  1. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  2. If the mixture is too sticky, wet your hands slightly to make rolling easier.

Chill

  1. Place the energy bites on a baking sheet or plate lined with parchment paper.
  2. Refrigerate for at least 30 minutes to firm up.

Store and Serve

  1. Once chilled, transfer the energy bites to an airtight container.
  2. Store in the refrigerator for up to 1 week or in the freezer for up to 3 months.
  3. Enjoy as a quick snack or energy boost throughout the day.
