Ingredients

For the Cookies:
• 1 cup unsalted butter, softened
• 1/2 cup powdered sugar
• 2 tablespoons lemon zest (from about 2 lemons)
• 2 tablespoons fresh lemon juice
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1/4 teaspoon salt

For the Coating:
• 1/2 cup powdered sugar (for dusting)


Instructions

Step 1: Prepare the Dough
1. Preheat Oven: Preheat your oven to 350°F (175°C).
2. Mix Butter and Sugar: In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
3. Add Flavorings: Mix in the lemon zest, lemon juice, and vanilla extract until well combined.
4. Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Step 2: Shape the Cookies
1. Form Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
2. Flatten Slightly: Gently flatten each ball with the bottom of a glass or your palm.

Step 3: Bake
1. Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden but the centers are still pale.
2. Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Step 4: Dust with Sugar
1. Coat Cookies: Once the cookies are completely cool, dust them with the remaining powdered sugar.
