Lemon Garlic Shrimp with Asparagus Recipe

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional, for heat)
  • Juice and zest of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

For Serving:

  • Cooked rice, quinoa, or pasta (optional)

 


Instructions

Step 1: Prepare the Ingredients

Ensure the shrimp are peeled and deveined. Pat them dry with paper towels.

Cut the asparagus into 2-inch pieces and set aside.

Step 2: Cook the Asparagus

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Add the asparagus pieces and sauté for about 3–4 minutes, or until they are bright green and tender-crisp. Remove the asparagus from the skillet and set aside.

Step 3: Cook the Shrimp

In the same skillet, add the remaining 2 tablespoons of olive oil.

Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 30 seconds until fragrant. Then, add the shrimp and cook for 2–3 minutes on each side, or until they turn pink and opaque.

Step 4: Combine and Finish

Return the cooked asparagus to the skillet with the shrimp.

Squeeze the juice of the lemon over the shrimp and asparagus, and add the lemon zest. Season with salt and pepper to taste.

Gently toss everything together to coat in the lemon garlic sauce and heat through for another minute.

Step 5: Serve

Serve the lemon garlic shrimp and asparagus over cooked rice, quinoa, or pasta if desired.

Sprinkle with chopped fresh parsley for a burst of color and flavor.
