  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 head of broccoli (cut into florets)
  • 1 lemon (juiced and zested)
  • 1 teaspoon dried oregano (or Italian seasoning)
  • Salt and pepper (to taste)
  • 1/4 cup chicken broth (or water)
  • Fresh parsley (chopped, for garnish)


Instructions

Step 1: Prepare the Chicken

  1. Season the Chicken: In a bowl, season the chicken pieces with salt, pepper, and dried oregano.

Step 2: Cook the Chicken

  1. Heat Olive Oil: In a large skillet, heat the olive oil over medium-high heat.
  2. Sauté Chicken: Add the seasoned chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3: Cook the Broccoli

  1. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  2. Add Broccoli: Add the broccoli florets and chicken broth to the skillet. Cover and cook for about 3-4 minutes until the broccoli is bright green and tender-crisp.

Step 4: Combine Ingredients

  1. Return Chicken: Return the cooked chicken to the skillet.
  2. Add Lemon: Pour in the lemon juice and zest, stirring to combine everything. Cook for an additional 1-2 minutes to heat through and allow the flavors to meld.

Step 5: Serve

  1. Garnish: Remove from heat and garnish with fresh parsley.
  2. Enjoy: Serve warm on its own or over rice or quinoa for a complete meal.
