Instructions
Step 1: Cook the Orzo
- Boil Water: In a large pot, bring salted water to a boil.
- Cook Orzo: Add the orzo pasta and cook according to package instructions until al dente, about 8–10 minutes. Drain and set aside.
Step 2: Sauté the Shrimp
- Heat Olive Oil: In a large skillet, heat the olive oil over medium heat.
- Cook Garlic: Add the minced garlic and sauté for about 1 minute until fragrant.
- Add Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque.
Step 3: Combine Ingredients
- Add Vegetables: Stir in the cherry tomatoes and spinach, cooking for about 2 minutes until the spinach wilts.
- Mix in Orzo: Add the cooked orzo along with the lemon juice and zest, tossing everything together to combine.
Step 4: Finish with Feta
- Add Feta: Gently fold in the crumbled feta cheese, allowing it to warm slightly.
- Adjust Seasoning: Taste and adjust with more salt and pepper if needed.
Step 5: Serve
- Garnish: Serve warm, garnished with fresh parsley if desired.
- Enjoy: Pair with a side salad or crusty bread if you like.
