- 2 cups cooked chicken (shredded)
- 1/2 cup cream cheese (softened)
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 1/2 cup cooked bacon (crumbled)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil (for frying)
- Low-carb tortillas (such as almond flour or coconut flour tortillas)
- Optional toppings: Sliced green onions, additional ranch dressing, or avocado
Instructions
Step 1: Prepare the Filling
- In a large bowl, combine the shredded chicken, softened cream cheese, shredded cheddar cheese, ranch dressing, crumbled bacon, garlic powder, and onion powder. Mix until well combined.
Step 2: Assemble the Taquitos
- Place a few tablespoons of the chicken mixture in the center of each low-carb tortilla. Roll tightly to form taquitos.
- If needed, use a toothpick to secure the ends of the taquitos.
Step 3: Cook the Taquitos
- In a large skillet, heat the olive oil over medium heat.
- Add the taquitos to the skillet, seam side down. Cook for about 3–4 minutes on each side, or until golden brown and crispy.
Step 4: Serve
- Remove from the skillet and let cool slightly. Serve with optional toppings like sliced green onions, additional ranch dressing, or avocado.
